Steps
- 1Whisk eggs with a pinch of salt and pepper.
- 2Melt butter in a nonstick pan over medium heat and soften the pepper for 2 minutes.
- 3Add spinach and let it wilt, then pour in the eggs.
- 4As the edges set, lift them to let raw egg flow underneath.
- 5Scatter cheese over one half, fold, and slide onto a plate.
