Steps
- 1Preheat the oven to 350ยฐF and grease a loaf pan.
- 2Squeeze the excess water from the grated zucchini.
- 3Whisk the eggs, honey and olive oil, then stir in the zucchini.
- 4Fold in the flour, cinnamon and baking soda, then the walnuts.
- 5Pour into the pan and bake 45โ50 minutes, until a tester comes out clean.
